At Nio Teas, every matcha is graded Latte, Entry, Premium or Superior. Entry Grade is where our ceremonial range begins: typically first- or second-harvest leaf, shaded before harvest, from young, carefully selected leaves. It is fresh and vegetal, and carries more astringency and bitterness than the grades above — brisk and lively as usucha, and bold enough to carry milk.
The Saemidori Matcha Henta sits in Entry Grade because of how it drinks. The Saemidori cultivar is grown for its delicate, sweet flavour, and here it gives a fresh, bright sweetness that turns to crisp edamame and a milky finish, with minimal astringency throughout.
Cultivar: SaemidoriTea variety
As the name would suggest, the saemidori matcha henta is made from the Saemidori cultivar. This is a rare cultivar in Japan but it works great in premium teas like gyokuro and matcha.
Although it has a lower yield than Yabukita and is quite sensitive to the cold, Saemidori is still cultivated due to the delicate and sweet flavor it produces. Mr. Henta uses this cultivar in the saemidori matcha henta to produce a delcious sweet and smooth flavor.
Preparation & Servings30 g = 15 servings · 60 g = 30 servings
Whisked thin as usucha, 2 g of matcha makes one bowl.
Soak the bamboo whisk — 2–3 minutes before first use, 30–60 seconds for daily use.
Sift 2 g (1 tsp) of matcha, about 2 chashaku scoops, into your bowl.
Heat water to 70°C / 160°F.
Add 10 ml (1 tbsp) of water and work it into a smooth paste with no clumps.
Add the rest of the water — 80 ml / ⅓ cup in total.
Whisk in quick W motions for 15–30 seconds.
Enjoy your matcha, then rinse the whisk, let it air-dry and store it on its holder.
As a latte:
Sift 2 g (1 tsp) of matcha, about 2 chashaku scoops, into your bowl.
Heat water to 70°C / 160°F.
Add 10 ml (1 tbsp) of water and work it into a smooth paste with no clumps.
Add another 30 ml of water — 40 ml in total — and whisk in quick W motions for 15–30 seconds.
Pour the matcha over your preferred hot or cold milk. Add ice for an iced matcha latte.

Orders to the US and EU ship domestically from our local warehouse, so there's no customs charge and no duty. A small number of destinations are served from our Japan warehouse, where your own customs authority may apply import duty, VAT or a carrier handling fee on delivery. 2 grams infused at 70℃. The Henta was grassy, sweet, nutty, smooth, and one letter short of a cinematic masterpiece. It was easier to foam than the Koun, full-bodied, and had a comfortable mouth-feel.
