When evaluating the Chanoka Kukicha Green Tea, we take into consideration both its texture and flavor. We assess whether it produces a dry or sweet taste, minerality, or acidity. Additionally, we evaluate the thickness or richness of the tea, known as mouthfeel. Finally, for kukicha green tea, we pay particular attention to the vegetal flavor profile, as this is a consistent characteristic across all types of kukicha.

This Kukicha Green Tea is a combination of dark green leaves and light yellow stems but the mix is mostly stems.

You may notice the JAS logo on some of our packages. This is an acronym for Japanese Agriculture Standards, which signifies that our teas are grown without the use of pesticides or chemicals and they are certified by the Japanese government.Β 

We like to make sure that our teas are produced using organic methods and we require our larger partner farms to obtain JAS certification through soil sampling and testing.

Smaller tea farms may face obstacles in acquiring JAS certification due to costs. Therefore, we accept their products labeled as "pesticide-free" to give these smaller producers an opportunity to sell their products while still adhering to our strict quality standards for all our products.

How to prepare the tea

For the optimal flavor of the Chanoka kukicha green tea, it's advised to brew it at a lower temperature. Higher temperatures may lead to bitterness and you won’t get the same complex and nuanced flavor profiles as you’d get when the tea is properly brewed.

    Step 1

    Before preparing the kukicha green tea, make sure you heat up the water to a temperature of 70 degrees Celsius or 160 degrees Fahrenheit. This is the ideal temperature for the kukicha green tea.

    Add 5 grams of kukicha green tea to your kyusu teapot or tea strainer

    Pour in 150ml of water and allow the tea leaves to brew undisturbed for 1 minute.

    After the tea leaves are done brewing, you can pour out your tea and if you have a kyusu teapot it will automatically filter out the leaves so they don’t overbrew inside the teapot and they don’t end up in your cup. Enjoy your tea!

    If you want to get more cups of tea out of the leaves, you can just add the same temperature water back into the teapot and brew the tea for 20 seconds this time. Each infusion will be slightly different, so you can get 3-4 entirely different cups of tea from the same leaves!

Necessary teaware

When it comes to preparing kukicha green tea, the most appropriate tool to use is the Kyusu teapot. This tool provides the leaves plenty of space to expand and release their flavor into the water, and it has a built in strainer to separate the tea leaves out as you pour.

Alternative without teaware

If you don't have a teapot, a tea strainer is the next best alternative for preparing this kukicha green tea. Keep in mind that since the tea leaves won’t have as much space to expand in the strainer as they would in the teapot so the resulting flavor may not be as strong. Eventually, you can upgrade to the teapot, but the tea strainer will work for now.

Takada Masahiro, a Uji-based farmer, is the one who produces this excellent kukicha green tea. He is part of Chanoka, a family business with a history dating back to 1900, when his great grandfather established their first tea garden in Uji. Since then, they have been committed to cultivating and manufacturing some of the finest teas in Japan.

The Chanoka kukicha green tea is produced in Uji, the most famous region when it comes to the production of Japanese green tea. This particular kukicha green tea is grown on the farm of Chanoka in Uji. The tea plants are cultivated at an altitude of 400 meters and it is unshaded, which allows the tea to maintain its naturally, slightly citrusy flavor profiles.

The Chanoka kukicha green tea is made from the Yabukita cultivar, the most popular tea variety in Japan.

    There are two primary factors that have allowed the Yabukita to become the most popular tea plant variety in Japan. Secondly, it produces a strong vegetal and savory flavor that is greatly appreciated by Japanese tea lovers!
