Ingredients

  • 2 tablespoons latte matcha powder

  • 1 SCOBY (Symbiotic Culture Of Bacteria and Yeast)

  • ½ cup organic cane sugar

  • 4 cups filtered water

  • 1 cup pre-made kombucha (as starter liquid)

  • Optional flavorings: fresh fruit, herbs, ginger, etc.

Directions

  1. Boil 4 cups of filtered water and add the organic cane sugar. Stir until dissolved.

  2. Once the water has cooled down a bit, add in the matcha and stir it into the liquid.

  3. Once the matcha is incorporated, add the pre-made kombucha as starter liquid. Stir gently to combine.

  4. Carefully place the SCOBY (Symbiotic Culture Of Bacteria and Yeast) into the tea mixture.

  5. Cover the container with a clean cloth or paper towel secured with a rubber band.

  6. Place the container in a warm and dark spot for about 7-14 days. The fermentation time may vary based on the desired level of tartness.

  7. Taste the kombucha after 7 days. If it's reached your preferred balance of sweet and tangy, it's ready to be bottled.

  8. This is where you can add the additional flavors like ginger to the bottles before sealing and letting them sit at room temperature for an additional 1-3 days to develop flavors.

  9. Once the kombucha has reached the desired flavor, remove the SCOBY and store it in a SCOBY hotel or start your next batch immediately.

  10. Refrigerate the bottled Matcha Kombucha to slow down the fermentation process. It's now ready to be enjoyed!
