Ingredients

  • 1 tablespoon Matcha Latte Powder

  • 2 cups all-purpose flour

  • 1/4 cup granulated sugar

  • 1 teaspoon salt

  • 1 packet (2 1/4 teaspoons) active dry yeast

  • 1/2 cup warm water

  • 1/2 cup cold unsalted butter, cut into small cubes

  • 1/2 cup cold whole milk

  • Additional Matcha for Dusting (optional)

  • 1 cup cold unsalted butter

  • 1 egg, beaten

    1. In a small bowl, dissolve the yeast in warm water and let it sit for about 5 minutes until it becomes frothy.

    2. In a large mixing bowl, whisk together the flour, sugar, and salt. Add the frothy yeast mixture, cold milk, and matcha powder. Mix until a soft dough forms.

    3. On a floured surface, knead the dough for about 5-7 minutes until it becomes smooth and elastic.

    4. Shape the dough into a ball and place it in a lightly greased bowl. Cover with a damp cloth and let it rise in a warm place for 1 to 1.5 hours or until doubled in size.

    5. Place the cold unsalted butter between two sheets of parchment paper and use a rolling pin to flatten it into a 1/2-inch thick square. Chill the butter block in the refrigerator for at least 30 minutes.

    6. Once the dough has risen, roll it out on a floured surface into a large rectangle about 1/4 inch thick.

    1. Take the chilled butter block and place it in the center of the rolled-out dough. Fold the dough over the butter block like an envelope, sealing the edges.

    2. Roll the dough out again into a larger rectangle and then fold it into thirds like a letter. This completes the first turn.

    3. Repeat the rolling and folding process two more times to achieve a total of three turns. Chill the dough in the refrigerator for 30 minutes between each turn.

    4. After the final turn, roll the dough out one last time to about 1/4 inch thick. Cut the dough into triangles and then roll each triangle from the base to the tip to form croissants.

    2. Place the shaped croissants on a baking sheet lined with parchment paper. Cover them loosely with plastic wrap and let them rise for 30 minutes.

    3. Brush the risen croissants with the beaten egg for a glossy finish.
