The pizza that sent the internet into a frenzy was the Pizza Hut matcha pizza launched by Pizza Hut Japan in September 2025. Called the Handy Melts Matcha Shiratama Kuromitsu, this limited-edition release was the result of a collaboration with Gion Tsujiri, a historic Kyoto tea house that has been crafting premium green tea since 1860. It marked Pizza Hut Japan's very first Japanese-style sweet pizza, and it made quite an entrance.

The pizza dough itself was infused with Uji matcha from Gion Tsujiri — matcha grown in Uji City, one of Japan's most celebrated tea-farming regions.

The filling combined rich matcha paste, chewy shiratama rice dumplings, mozzarella, and cream cheese. To finish, a packet of kuromitsu, a traditional Japanese brown sugar syrup with a flavour similar to molasses, was served on the side for customers to drizzle over the top.

Pizza Hut Brunei Joins the Matcha Movement

Shortly after the Japan release, Pizza Hut matcha pizza enthusiasm spread further when Pizza Hut Brunei introduced its own version: the Matcha Cheese Stuffed Crust Pizza. Available for a limited time until October 2025, the Brunei creation took a different approach by incorporating matcha directly into the stuffed crust, combining gooey melted cheese with the earthy bite of green tea. Its tagline — 'Not your usual pizza, not your usual matcha' — summed up the spirit of the concept perfectly.

This homemade matcha pizza recipe brings the spirit of the viral Pizza Hut Japan creation into your own kitchen, using premium matcha powder for a vibrant green crust with a beautifully earthy flavour.


Ingredients

  • 3 tsp matcha powder

  • 1.5 tsp instant dry yeast

  • 250 g all-purpose flour

  • 1 tsp sugar

  • 150 ml warm water

  • 1 tbsp olive oil

  • 120 g cream cheese, softened

  • 80 g shredded mozzarella cheese

  • 4 tbsp red bean paste

  • 6 shiratama dumplings

  • 2 tbsp kuromitsu syrup

    1. In a large mixing bowl, combine the flour, matcha powder, sugar, and salt. Mix well to distribute the matcha evenly throughout the dry ingredients.

    2. Dissolve the yeast in the warm water and allow it to sit for 5 minutes until it becomes slightly frothy.Pour the yeast mixture and olive oil into the dry ingredients and mix until a shaggy dough forms.

    3. Turn the dough out onto a lightly floured surface and knead for 8 to 10 minutes until smooth, soft, and slightly tacky. The dough should have a uniform green hue throughout.place the dough inside, cover with a clean cloth, and allow to rise in a warm spot for 60 minutes, or until roughly doubled in size.

    1. While the dough is rising, place the softened cream cheese in a small bowl.

    2. Add the sugar and matcha powder and mix together until smooth and well combined. Set aside at room temperature.

    1. Preheat your oven to 220°C (430°F). Place a baking tray or pizza stone inside to heat up.Once the dough has risen, punch it down gently and roll it out on a piece of baking parchment into a circle approximately 25 to 28 cm in diameter.

    2. Spread the matcha cream cheese base evenly over the dough, leaving a 2 cm border around the edge for the crust.Scatter the shredded mozzarella over the cream cheese layer. Dot small spoonfuls of red bean paste across the surface and arrange the shiratama dumplings evenly over the top.

    3. Carefully slide the pizza (on its parchment) onto the hot baking tray or stone. Bake for 10 to 12 minutes, or until the crust is golden and the cheese is melted and lightly bubbling.

    1. Remove from the oven and allow to cool for 2 minutes. Drizzle the kuromitsu syrup over the top and finish with a light dusting of matcha powder. Slice and serve immediately.
