To evaluate the flavor of the Henta Sencha Saemidori we look for a combination of the aroma and also how the tea interacts with the palate. Does it produce a dryness, acidity, minerality, sweetness or umami? We’ll also evaluate the texture of the tea, otherwise known as mouthfeel. Finally, for sencha tea, we’ll evaluate it based on how vegetal the taste profile is as this is a common characteristic throughout most sencha teas. 

Step 1 - Observing the Appearance

The leaves of the Sencha Saemidori are a dark shade of green, with a combination of tightly rolled needles and smaller leaf particles.

Step 2 - Assessing the Aroma

The aroma coming off the dry leaves is starchy and sweet, with notes of saltine crackers and a hint of lemon. The aroma of the leaves becomes a bit earthier as they are soaked.

Step 3 - Tasting the Tea

The Henta Sencha Saemidori lures you in with a thick, syrupy sweetness. There is a tiny hint of sweet cantaloupe melon in the mid-palate and then it finishes strong with a mineral sweetness and absolutely no bitterness or dryness.

Step 4 - Evaluating the sensation on the palate

The mouthfeel of the Henta Sencha Saemidori is very thick, as it coats the palate with sweetness and a tiny hint of acidity. There is no dryness in this tea, so it quenches the palate with its sweetness and fruity acidity.

JAS Certified

The JAS acronym stands for Japanese Agriculture Standards, which certify products grown without the use of pesticides or chemicals.

When we select tea, we prioritize tea fields that are free of pesticides or chemicals. The larger tea farmers we collaborate with can afford soil sampling and testing, and we require them to provide the JAS label.

However, we also work with some smaller tea farmers who have not yet obtained certification but still produce excellent tea. In these cases, we accept the "pesticide-free" label and aim to offer opportunities to small farmers without making the screening process excessively difficult.

How to prepare the tea

To prepare this sencha saemidori, you can use a lower temperature water and a shorter brewing time. We’ll show you a step by step guide to help prepare this tea.

    Step 1

    First, heat the water to a temperature of 70 degrees Celsius or 160 degrees Fahrenheit. This will be the perfect temperature for this sencha saemidori

    Step 2

    Add 5 grams of the sencha saemidori to your kyusu teapot and pour in 150ml of water

    Step 3

    Allow the tea leaves to brew in the water undisturbed for 1 minute. This will give the leaves enough time to unfurl and release their flavor into the water

    Step 4

    Once the brewing time is complete, you can now pour your sencha saemidori, and the teapot will filter out the leaves on its own, ensuring that they do not make their way into your cup. Sit back and enjoy your tea!

    2nd brew

    Do not throw away your leaves after the first brewing! The henta sencha saemidori can be steeped an additional 2-3 times. Simply pour more hot water into the teapot and let the leaves steep for 20 seconds during each subsequent infusion.

Necessary teaware

In order to prepare the perfect cup of sencha saemidori, you will need a kyusu teapot. The best teapot for this purpose is the Fukamushi teapot, which features a circular mesh filter that makes the tea less likely to clog during pouring. If the teapot becomes clogged with leaves, the tea will stay in for too long and overbrew. 

Alternative without teaware 

If you don’t have a teapot at home, we recommend using a tea strainer for the sencha saemidori. This will separate the tea leaves as you pour and stop the infusion so the tea doesn’t overbrew and the leaves are kept out of your cup.

Information about the farm

The henta sencha saemidori is of course grown by Mr. Henta, a talented farmer in Kirishima, Japan. When we met with Mr. Henta for the first time, he taught us so much about the intricacies of different tea plants. 

What was really interesting to us was his extensive knowledge of different tea plant varieties, also called cultivars. Each of these cultivars is a little bit different not only in terms of flavor, but also in how they grow.

Although Mr. Henta cultivates green tea on a very small field, he produces 8 different tea plant varieties in total. He has become an expert at blending these different tea plant varieties together to capture the best aspects of each.

The Henta Sencha Saemidori is cultivated by the skilled farmer Mr. Henta in Kirishima, Japan. During our initial meeting with him, we gained valuable insight into the complexities of various tea plants.

What piqued our interest was Mr. Henta's extensive knowledge of tea plant cultivars, each with unique flavors and growth patterns. Despite cultivating green tea on a small plot of land, he manages to cultivate a total of 8 different tea plant varieties. Through his expertise in blending these cultivars, he is able to capture the finest qualities of each.

As the name would suggest, the sencha saemidori henta is made from the Saemidori cultivar.

  • Saemidori

    Saemidori is a difficult tea plant variety to produce, as it can be quite sensitive to the cold and the yield is lower than Yabukita. Nonetheless, this tea cultivar is still used because of the light sweet flavor it produces. While normally reserved for premium green teas like gyokuro and matcha, the cultivar makes an appearance to produce a deliciously flavorful henta sencha saemidori.
