What is matcha?
Now that we’ve talked about how to make and serve matcha cookies, I think it’s important to give some background on what matcha tea is. Matcha is essentially a powdered green tea, but it is so much more than that!
It’s made from tea plants that have been shaded for 3 weeks or more before the harvest. By protecting the tea plants from sunlight, they actually produce less bitterness, and therefore you get a smoother and sweeter flavor in the matcha.
After the 3 weeks of shading is over, the farmer is then ready to harvest the top 3 sprouts of the tea plant. These top leaves are the richest in nutrients and the sweetest in flavor, so they are perfect for creating matcha tea. Afterwards the stems within the tea leaves are removed, and then they are ground into a fine powder in a large stone mill.
What makes matcha so special?
The reason matcha is so special is because unlike other teas which are infused into water, matcha is mixed directly into water. This means that you are consuming the entire leaf along with all of its health benefits. The leaves are already high in nutrients to begin with, but this takes it to the next level.
This also applies when you use matcha powder in recipes. You are adding ground up tea leaves to your matcha cookies and then mixing them in directly.
