  • 2 tbsp latte matcha powder

  • 2 cups Mochiko sweet rice flour

  • ¾ cup sugar

  • 1 tsp baking powder

  • ½ tsp baking soda

  • ½ tsp salt

  • 2 eggs

  • ½ cup vegetable oil

  • 1 cup milk

  • 1 tsp vanilla extract

    1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.

    2. In a large bowl, whisk together Mochiko sweet rice flour, sugar, baking powder, baking soda, salt, and matcha powder. Ensure the matcha is evenly distributed

    3. In a separate bowl, lightly beat the eggs. Add vegetable oil, milk, and vanilla extract. Mix until well combined.

    4. Gradually add the wet ingredients to the dry ingredients. Stir until just combined, being careful not to overmix. A few lumps are okay.

    1. Using a spoon or an ice cream scoop, fill each muffin cup with the batter, about 2/3 full. This allows room for the muffins to rise while baking.

    1. Place the muffin tin in the preheated oven and bake for approximately 18-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.

    2. Once baked, remove the muffin tin from the oven and allow the muffins to cool in the tin for a few minutes before transferring them to a wire rack to cool completely.
