This also creates a sweeter and more savory flavor in the tea. The soil on the farm of Mr. Sakamoto is incredibly soft, due to the diversity of flora and fauna on the field which loosens up the soil. In China, green tea leaves would be pressed into a brick so that they could be carried over long distances. As the climate changed from warm Southern China to the mountainous regions of Tibet, the tea began to naturally ferment. The microbes in the leaf and in the air transformed the tea leaves, rendering the flavor smoother and fruitier.

Because the flavor of these naturally fermented teas became so popular, producers began experimenting with different production methods to make the tea taste better. They began trying different methods of pan firing, solar withering and gradual aging. The most famous of the post fermented teas is puerh. Similar to champagne, a post fermented tea is only called puerh if it is produced around the region or puerh in Yunnan. This is of course the most famous region for post fermented tea production, but post fermented teas can also be produced in Japan. Let’s talk about the Japanese post fermented tea known as Nadeshiko.

What is Nadeshiko Tea

Nadeshiko Tea is a Japanese fermented tea made using koji, the same microbes used to make sake, soy sauce and miso. This is the most common culture to use for fermentation in Japanese food, so it’s no surprise that it is the key ingredient in Japanese fermented tea as well.

Harvesting of Nadeshiko

The tea leaves are collected from the first or second harvest and then they are steamed, rolled and dried. Once the leaves are processed, they are gathered together into a room to begin the fermentation process.

The fermentation of Nadeshiko

After the leaves have been gathered, moisture is applied on top of the leaves before they are sterilized. Then the koji is applied to the leaves to activate the fermentation. Unlike puerh tea for example, this is done in a controlled, sterilized environment to make sure the koji is the only microbe fermenting the tea leaves.

The Rosé of tea

If puerh is the champagne of the post fermented tea world, Nadeshiko is the rosé. This tea is also known as “pink tea” because of its very unique color. The flavor is sweet and flowery, and it is slightly lighter compared to a rich puerh tea.

You may notice some tasting notes with a puerh tea. This earthy or tree bark like flavor is present in the finish. Overall, it is a bit more flowery and sweet, and shares some aspects with a hojicha.

Benefits of Nadeshiko tea

Nadeshiko has similarities to a Japanese black tea or Wakoucha, but also Chinese puerh tea. The notable difference is that it has a higher concentration of catechins, citric acid and gallic acid. These compounds are developed thanks to the strictly controlled fermentation process.

Similar to other fermented foods, fermented Japanese tea like Nadeshiko is thought to help support a healthy diet and metabolism. Research conducted at Shizuoka University by a team of researchers discovered that there are two new types of polyphenols found inside this tea that could have some key health benefits. These polyphenols are thought to suppress the enzymes responsible for adult diabetes. They are also thought to decrease the levels of visceral fat, neutral fat and cholesterol.

During the unique microbial fermentation process, the catechins found within the tea leaf are degraded and turned into teadenol A and teadenol B. Teadenol A has been shown to suppress appetite and increase insulin secretion. Fermented Japanese green teas are also thought to reduce the risk of atherosclerosis.

Made in Uji

The Nadeshiko comes to us from the talented farmers at Chanoka in Uji. The soil is great quality, the air is clean and misty, the terrain is hilly and the winters are relatively mild with no frost. This climate has produced excellent teas for hundreds of years.

History of Uji Tea

Uji has been a hot bed for tea cultivation since the 1300s. When the tea plant was first cultivated in Japan in 1191, it was mostly grown in the Toganoo mountains. Toganoo was known for producing the best tea on the island, but they would soon be challenged by their counterparts to the south. The original monk Eisai who brought the tea seeds to Japan from China, shared some of the seeds with his friend Myoe Shonin in Uji.

By 1383, Uji was known for producing the second best tea in Japan. In 1460, the Shogun Ashikaga Yoshimasa proclaimed that Uji tea was his favorite type, which began the unofficial reign of Uji as the top tea producing region in Japan. Depending on who you talk to, that reign still may persist to this day, as Uji teas are the most internationally recognized Japanese green teas.

Most of the reputation for Uji tea is thanks to their production of matcha, but they also produce some Japanese fermented teas here and we are happy to have found a great one!

How to prepare Japanese fermented tea

Leaf: 5 grams

Water: 150ml

Temperature: 80 degrees C or 175 degrees Fahrenheit

Time: 1 minute

This tea can be rebrewed up to 4 times at 20 seconds each

//cdn.shopify.com/s/files/1/0019/8023/5849/files/nio-teas-nadeshiko-rose-japanese-fermented-tea-product-leaves-brewed.webp?v=1738941158
matcha-genmaicha
Matcha Genmaicha Shizuoka

The Matcha Genmaicha Shizuoka Green Tea is an unique green tea made by combining matcha powder, tea leaves and roasted rice producing a great flavor

Taste

Observing the Appearance

The leaves of the genmaicha matcha tea are olive green, the rice is brown orange and everything is coated with a green powder.

Assessing the Aroma

The aroma coming off the dry leaves of the matcha genmaicha are citrusy and toasty, like freshly baked bread

Tasting the Tea

This matcha genmaicha begins with a nice smooth flavor with hints of steamed vegetables. As mentioned before, when you drink genmaicha with matcha, you are consuming more of the leaf, so if there are any pesticides or chemicals on the tea, you will be getting a heavier dose of that.

We make sure that all the teas on our website are grown without the use of pesticides or chemicals, and the matcha genmaicha is no exception. When we visit these tea fields that have not been treated with pesticides, we notice that there is a diverse array of plant an animal life thriving in between the rows of tea plants. Shizuoka is located just a few hundred miles from Tokyo, and it has a diverse landscape with both flat lands and small mountains. It is perhaps best known for its iconic views of Mt. Fuji, and teas like the genmaicha brown rice green tea with matcha are grown just a short distance from this iconic peak.

This matcha genmaicha green tea was grown on a small plantation in the hills of Shizuoka. Because the tea plants are nestled into these hills, they receive partial shading throughout the day, which can improve the taste of the green tea. This is because when the tea plant is exposed to direct sunlight, it will begin to produce more catechins, which create the bitter flavors in the tea. Anytime the tea plant is cut off from sunlight, whether it be directly or indirectly, it will reduce the amount of catechins in the leaves.

Who Makes the Gyokuro Genmaicha?

The matcha genmaicha tea is made by the farmers at Zenkouen. We had the privilege of meeting with the farmers of Zenkouen and sitting down with them for a few cups of tea. The genmaicha in particular made a good impression on us, as it was a nice balance between the nutty flavors of the rice and the sweet vegetal flavors of the leaves.

We also toured the facility of Zenkouen and got to take a look at some of his organic fertilizers. The farmers use a blend of shells, organic materials and charcoal to nourish the plants without using pesticides or chemicals. It is important to create not only a healthy environment for the tea, but also for other animals as well.

When we first arrived at the tea fields, we interrupted 2 grazing serow in the middle of their dinner. They were feasting on the vegetation growing between the tea fields, and it was a good sign to see that other plants could grow on the field besides just tea.

Cultivar and tea plant variety

This matcha genmaicha is made from the Yabukita cultivar, the most popular tea cultivar in Japan.

Yabukita

Yabukitais now the most popular tea cultivar in Japan, making up 75% of the total tea production. One of the reasons is that the tea plants are resistant to frost, which prepares them for the comparatively cold winters of central Japan. Another reason it’s so popular is the bold savory and steamed vegetable flavors it produces.

Benefits of Mixing Genmaicha with Matcha Tea

The matcha genmaicha green tea comes with many different benefits. The easiest one to notice is the fact that the matcha imparts a very strong flavor into the tea.

If you’ve ever had matcha before, you’ll know that the flavor is far more intense compared to a regular green tea. The same is true for matcha genmaicha tea, which has the rich and full-bodied flavor of a matcha combined with the pleasant warm cereal notes of a genmaicha.

In addition to getting a stronger flavor, you’ll also get more caffeine when you drink genmaicha with matcha. This is because the matcha powder will be mixed directly into your cup of tea, allowing you to essentially drink more of the tea leaf.

When you drink a typical green tea, you are only drinking the compounds within the leaf that have been dissolved into water. Because matcha is a powder tea mixed directly into water, you are consuming the entire leaf, which is why genmaicha matcha has a higher caffeine and nutrient content compared with a typical genmai cha.

Matcha genmaicha vs regular toasted rice tea

You may find yourself trying to decide between matcha genmaicha and regular genmaicha. When you get your genmaicha with matcha, you end up with much more of that green tea flavor to balance out the toasted rice. One of the complaints about normal genmaicha is that it doesn’t taste enough like a green tea and instead all you really get is the taste of toasted rice.

The matcha genmaicha is the perfect fix for this, giving you plenty of that classic green tea flavor. You’ll also notice a vibrant jade green color and more of an energy boost with this tea. Because it is genmaicha with matcha powder, you will end up with a much higher caffeine content compared to a normal genmaicha tea.
